Best Cajun

Ne Fremont may be a long way from the Louisiana bayou-or for that matter, the French Quarter-but if you're searching for authentic Cajun cuisine, say our chefs, nobody comes closer, or does it finer, than Acadia.
"We really got lucky when Acadia came to Portland", says Kevin Peck of Capitol Coffeehouse and Bistro. "I've learned from trial and error that it's about keeping an eye on the ingredients. Acadia holds true to the heat and flavor while not glossing over the details."
Authentic details, according to a roll call of our top chefs (Acadia was selected in a landslide of votes), such as oysters wrapped in succulent bacon, vegetable undercooked to al dente perfection, grilled pork chops and, of course, catfish and crawfish, all propelled to a higher place through the use of complex glazes and sauces.
Giorgio's Michael Clancy thinks of Acadia's menu as a nice tight jambalaya. "They do a rice that's tops-it's not run-of-the-mill in any way," he says.. "When the rice gets your attention, you know the rest of the menu is going to be golden."
